Abstract

This work will study the development of new food products obtained from food industry bio-waste. The main objective is to reduce the environmental impact of the agri-food industry by reducing waste or revaluing by-products and applying eco-innovative techniques, as high hydrostatic pressures, as an alternative to conventional heat treatments in food processing.
