Resumo

A study was conducted to determine the effect of forage (hay or silage) and time ofyear (winter, spring, summer, autumn) on sheep milk quality. Bulk tank milk sampleswere taken in 4 times during 2016 from 10 farms using vetch silage and 10 farms usingvetch or alfalfa hay as forage basis for lactating animals. Milk physicochemical, hygienicsanitation and technological quality was assessed. Milk showed higher total solids contentand whither colour in autumn; pH values were higher in spring than in winter with nochanges in microbiological counts; clotting time, hardening speed, hardness and curd yieldwere higher in winter than in spring or summer. Type of forage did not affect milk chemicalcomposition albeit milk from farms using vetch silage had lower lightness (L*) and higheryellow index (b*), pH and butyric spores counts, as well as lower curd yield.
